Will these HD Star Trek's be playable on plain old boring DVD players? The release isn't real clear on that.

Depends upon the player. Some of the HD DVD players appearing now do not play older DVDs. 
On the other hand, you get to see "Spock's Brain" in glorious HD! Oh...wait a minute...
